Ingredients
Scale
8 oz noodles (lo mein or spaghetti)
1 lb ground beef
1 medium onion, finely chopped
1 medium carrot, diced
3 cloves garlic, minced
1/3 cup soy sauce (low-sodium recommended)
1/4 cup brown sugar
1/2 teaspoon ground ginger
1/4 teaspoon black pepper
2 teaspoons cornstarch mixed with 2 tablespoons water
2 tablespoons cooking oil
1/4 cup green onions, chopped (for garnish)
Optional substitutions:
Use rice noodles or zucchini noodles for a gluten-free option.
Swap ground turkey or chicken for beef if preferred.
Instructions
Step1: Cook the Noodles
Boil water and cook noodles according to package instructions. Drain and set aside.
Step2: Prepare the Ground Beef
Heat 1 tablespoon of oil in a large skillet over medium-high heat. Add ground beef and cook until browned. Drain any excess fat and remove beef from the pan.
Step3: Sauté the Vegetables
In the same skillet, heat the remaining oil. Add onions, carrots, and garlic. Sauté for 3-4 minutes until softened.
Step4: Make the Sauce
In a small bowl, mix soy sauce, brown sugar, ginger, and black pepper. Pour this sauce into the skillet with the vegetables.
Step5: Combine the Ingredients
Return the cooked beef to the skillet. Add the cornstarch slurry, stirring constantly until the sauce thickens (about 2 minutes).
Step6: Mix in the Noodles
Toss the cooked noodles into the skillet, ensuring they are fully coated with the sauce. Mix well.
Step7: Garnish and Serve
Remove from heat, garnish with green onions, and serve immediately.
Notes
Use fresh garlic and ginger for a more robust flavor.
For added heat, sprinkle red chili flakes or drizzle with sriracha sauce.
Add more vegetables like broccoli, snap peas, or bell peppers to boost nutrition.
