Description
These No Bake Mint Chocolate Chip Clusters are cool, creamy, and crunchy bite-sized treats made with melted chocolate, cereal, marshmallows, and mint candy. Ready in under 30 minutes, they’re perfect for holidays, gifting, or anytime sweet cravings strike.
Ingredients
Scale
2 cups semi-sweet chocolate chips
1 cup milk chocolate chips
2 tablespoons butter
1 ½ cups crispy rice cereal or cornflakes
1 cup mini marshmallows
¾ cup mint candy pieces or mint chocolate candies
½ cup mini chocolate chips
Instructions
In a heat-safe bowl, combine semi-sweet chocolate chips, milk chocolate chips, and butter. Melt over a double boiler or in the microwave in 30-second intervals, stirring until smooth.
Remove from heat. Gently fold in the crispy rice cereal, mini marshmallows, mint candy pieces, and mini chocolate chips until evenly coated.
Using a spoon or cookie scoop, drop tablespoon-sized mounds onto a parchment-lined baking sheet.
Let the clusters set at room temperature or refrigerate for 20–30 minutes until firm.
Once set, peel from parchment and serve immediately or store in an airtight container.
Notes
Use high-quality chocolate for best flavor and smooth texture.
Work quickly once the chocolate is melted to avoid premature setting.
Use parchment paper to prevent sticking.
For a festive touch, sprinkle crushed peppermint candies on top before chilling.
Clusters can be stored for up to 2 weeks in the fridge or 2 months in the freezer.
