Ingredients
Scale
8 flour tortillas (or corn tortillas, for a gluten-free option)
1 lb ground beef
2 tablespoons taco seasoning
¼ cup water
4 tablespoons enchilada sauce (plus more for topping)
8 oz refried beans (½ can)
½ cup shredded cheese (cheddar, mozzarella, or Mexican cheese blend)
Toppings:
4 tablespoons enchilada sauce
½ cup shredded cheese (cheddar, mozzarella, or Mexican cheese blend)
Optional garnishes: diced tomatoes, red onions, black olives, sour cream, green onions
Instructions
Step 1: Prepare the Filling
Start by browning the ground beef in a large skillet over medium heat. Break the meat into small pieces as it cooks, sautéing for about 5-8 minutes until fully cooked. Drain any excess grease, then stir in the taco seasoning, water, and enchilada sauce. Let the mixture simmer for 1-2 minutes to blend the flavors.
Step 2: Assemble the Pizzas
Take a tortilla and spread a thin layer of refried beans over it. Top with a portion of the cooked ground beef mixture, followed by a layer of shredded cheese. Place another tortilla on top to form a sandwich.
Step 3: Add the Toppings
Spread a tablespoon of enchilada sauce over the top tortilla, then sprinkle more shredded cheese to cover the surface.
Step 4: Cook the Pizzas
There are three ways to cook your Mexican Pizza:
Air Fryer: Preheat to 400°F. Cook one pizza at a time for about 5 minutes, or until the cheese melts and the tortillas are crispy.
Oven: Preheat to 350°F. Place the pizzas on a sheet pan and bake for 8-10 minutes until the cheese is melted and the tortillas are golden.
Pan Fry: In a large frying pan with a lid, heat a splash of oil. Add the pizza and cover. Cook for 4-5 minutes until the cheese melts and the tortilla crisps up.
Step 5: Garnish and Serve
Top the cooked pizzas with your favorite garnishes like diced tomatoes, red onions, black olives, sour cream, and green onions. Slice and enjoy!
Notes
Fresh Tortillas: Use fresh tortillas to ensure they crisp up nicely when cooking.
Cheese Variety: A blend of cheddar, mozzarella, and Mexican cheese works best for a balanced flavor.
Custom Fillings: Customize the filling with chicken, black beans, or even grilled vegetables for a different twist on the classic recipe.
