  • 1 cup plain Greek yogurt
  • 1 medium seedless cucumber, chopped
  • 1 teaspoon white wine vinegar
  • 2 teaspoons minced fresh mint or 1 teaspoon dried mint
  • 1 carton (10 ounces) hummus
  • 1 medium red onion, chopped
  • 1 cup chopped roasted sweet red peppers, drained
  • 2 packages (4 ounces each) crumbled feta cheese
  • 1/2 cup pitted Greek olives, sliced
  • 2 plum tomatoes, chopped
  • Optional: Minced fresh parsley and additional minced fresh mint

For the Pita Chips:

  • 20 pita pocket halves
  • 1/4 cup olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper

Instructions

 

  1. Prepare the Yogurt:
    • Line a strainer with 4 layers of cheesecloth or a coffee filter and place it over a bowl. Pour the Greek yogurt into the prepared strainer, cover it with the edges of the cheesecloth, and refrigerate for 8 hours or overnight. This step will help thicken the yogurt by draining excess liquid.
  2. Make the Yogurt Mixture:
    • In a small bowl, combine the strained yogurt, chopped cucumber, white wine vinegar, and mint. Stir until well mixed, and set aside.
  3. Layer the Ingredients:
    • In a 9-inch deep dish pie plate, spread the hummus evenly across the bottom. Next, layer the chopped red onion, roasted sweet red peppers, crumbled feta cheese, sliced olives, and chopped tomatoes over the hummus. Finally, spread the yogurt mixture on top of the layered ingredients. If desired, garnish with minced fresh parsley and additional mint. Refrigerate until ready to serve.
  4. Prepare the Pita Chips:
    • Preheat your oven to 400°F (200°C). Cut each pita half into 3 wedges, then separate each wedge into 2 pieces. Arrange the pita pieces in a single layer on ungreased baking sheets. Brush both sides with olive oil, then sprinkle with salt and pepper. Bake for 8-10 minutes or until crisp, turning once during baking.
  5. Serve:
    • Once the pita chips are crisp and golden, serve them alongside the chilled Mediterranean Layered Delight. Enjoy the layers of flavor with each crispy bite!
