For Marinated Chicken:

  • 1 lb chicken breasts or thighs (Rotisserie chicken will also work)
  • 1 lemon, squeezed
  • ¼ cup olive oil
  • 1 tsp garlic powder
  • ½ tsp Italian Seasoning Blend (dried oregano, dried basil, dried thyme)
  • ½ tsp salt
  • ½ tsp smoked paprika

For the Wraps:

  • 46 large tortillas
  • 1 cup hummus
  • ¼ cup cucumber, sliced
  • ¼ cup tomatoes, chopped
  • 1 cup romaine, shredded
  • ¼ cup feta
  • ¼ cup olives, chopped (Kalamata or green olives)
  • 1 bell pepper, sliced and sautéed
  • ½ red onion, sliced and sautéed

Optional Substitutions:

  • Dairy-Free Option: Swap feta with a plant-based cheese.
  • Gluten-Free Option: Use gluten-free tortillas.
  • Vegan Option: Replace chicken with roasted chickpeas or tofu.

Instructions

Step 1: Prepare the Chicken

If you’re using rotisserie chicken, skip this step.

  1. In a large bowl, slice the chicken breasts in half and add all the marinade ingredients.
  2. Marinate the chicken for 20 minutes (or longer if you have time).
  3. In a large skillet, heat 1 tsp oil on medium/high heat and add the marinated chicken.
  4. Cook for about 8-10 minutes on each side, flipping a few times. Cook until the internal temperature reaches 165ºF.
  5. Once the chicken is cooked through, transfer to a plate.

Step 2: Sauté the Peppers and Onions

  1. Using the same skillet, add the sliced peppers and onions.
  2. Add 1 tsp of oil and sauté until soft and slightly caramelized (about 5 minutes).
  3. Season with a pinch of salt and set aside.

Step 3: Assemble the Mediterranean Wraps

  1. Toast the tortillas for 45 seconds on the stove (optional).
  2. Spread a generous layer of hummus on each tortilla.
  3. Add the shredded romaine, sliced cucumbers, chopped tomatoes, and feta.
  4. Layer with marinated chicken slices, sautéed peppers, onions, and chopped olives.
  5. Roll the tortilla by folding the bottom up halfway, then fold in the sides, and secure with a toothpick.
