Instructions

 

Step 1: Preheat Your Oven

Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly spray it with non-stick spray to prevent sticking.

Step 2: Mix the Ingredients

In a large bowl, combine the ground chicken, breadcrumbs, egg, sun-dried tomatoes, feta, parmesan, garlic, green onions, parsley, salt, and pepper. Using your hands or a spoon, mix everything until well-combined. This mixture should be firm enough to hold together when forming meatballs but moist enough for tenderness.

Step 3: Shape the Meatballs

Using a cookie scoop or your hands, form the mixture into 2-inch meatballs. You should get around 18 meatballs. Place them on the prepared baking sheet, leaving space between each one.

Place the baking sheet in the preheated oven and bake for 20-25 minutes, or until the meatballs are lightly browned and cooked through. The internal temperature should reach 165°F (74°C) for food safety.
