A quick and flavorful chicken gyro recipe featuring juicy marinated chicken, creamy tzatziki sauce, and fresh vegetables wrapped in warm pita bread.

- 1.5 lbs boneless, skinless chicken thighs (or breasts)
- 3 tbsp olive oil
- 2 tbsp red wine vinegar
- 2 cloves garlic, minced
- 1 tbsp dried oregano
- 1 tsp ground cumin
- 1 tsp smoked paprika
- Salt and pepper to taste
- 1 cup Greek yogurt (full-fat)
- 1 medium cucumber, grated & squeezed
- 2 cloves garlic, minced (for sauce)
- 1 tbsp olive oil (for sauce)
- 1 tbsp fresh dill, chopped (or 1 tsp dried dill)
- 1 tbsp lemon juice
- Salt to taste (for sauce)
- 4 large pita breads or flatbreads
- 1 cup cherry tomatoes, halved
- 1 cup red onion, thinly sliced
- 1 cup lettuce, shredded
- 1/2 cup feta cheese, crumbled
- Olive oil for drizzling
- Fresh parsley for garnish (optional)
Instructions
- In a large bowl, whisk olive oil, red wine vinegar, minced garlic, oregano, cumin, smoked paprika, salt, and pepper.
- Add chicken thighs to the marinade and coat well. Cover and refrigerate for at least 1 hour or overnight.
- In a medium bowl, combine Greek yogurt, grated cucumber, garlic, olive oil, dill, lemon juice, and salt. Stir until smooth and refrigerate until serving.
- Preheat grill to medium-high heat. Grill chicken for 5–7 minutes per side until cooked through and internal temperature reaches 165°F (75°C). Alternatively, bake at 400°F (200°C) for 20–25 minutes or pan-sear in a skillet for 5–7 minutes per side.
- Let chicken rest for 5 minutes before slicing into strips.
- Warm pita breads on grill or skillet for about 1 minute per side.
- Assemble gyros by adding sliced chicken, lettuce, tomatoes, onions, and feta to pita. Top with tzatziki sauce, drizzle with olive oil, and garnish with parsley.

- Squeeze cucumber thoroughly to avoid watery tzatziki.
- Use whole-wheat pita for a healthier option.
