Mediterranean Baked Fish with Herb-Infused Tomatoes and Olives

  • To Season the Fish:
    • 1 Fish Fillet
    • 1 teaspoon Paprika
    • 1 teaspoon Italian seasoning
    • 1 teaspoon Cajun seasoning (Old Bay or Creole seasoning)
    • ½ teaspoon Chili flakes
    • 1 teaspoon Fish seasoning (optional)
    • ½ teaspoon Salt
    • ½ teaspoon Black pepper
    • 3 tablespoons Cooking oil
  • For the Tomatoes and Olives:
    • 2 cups Cherry tomatoes
    • ¼ cup Olives
    • 2 sprigs Parsley, fresh
    • 2 sprigs Thyme, fresh
    • 3 Garlic cloves, minced or diced
    • ½ teaspoon Of the mixed seasoning above
    • 2 tablespoons Water
    • 3 tablespoons Salted butter
    • Pinch of Salt and Pepper

Instructions

 

  1. Preheat your oven to 400℉ (200℃).
  2. Season the Fish: In a small bowl, mix all the ingredients to season the fish. Reserve 1 teaspoon of the seasoning mix to use with the tomatoes. Rub both sides of the fish fillet with the seasoning mix.
  3. Sear the Fish: Heat the cooking oil in a pan over medium heat. Sear both sides of the fish fillet for 1 minute per side, just until charred but not fully cooked. Remove and set aside.
  4. Prepare the Tomato and Olive Mixture: In the same pan, add all the ingredients for the tomatoes and olives mixture, except for the butter. Sauté on medium heat for about 3 minutes, stirring continuously.
  5. Bake the Fish: Place the seared fish fillet in the center of the pan, add the butter on top, and transfer the pan to the preheated oven. If the pan is not oven-safe, transfer everything to a baking dish. Bake at 400℉ (200℃) for 10 minutes, or until the fish is fully cooked and flaky.
  6. Serve: Remove from the oven and serve immediately with your choice of side.

Notes

 

  • Use fresh herbs whenever possible. Fresh parsley and thyme provide a more vibrant flavor compared to dried herbs.
  • Choose the right fish: White fish like cod, haddock, or sea bass work wonderfully in this recipe. These types of fish hold up well during baking and absorb the flavors beautifully.
  • Don’t skip the sear: Searing the fish before baking helps lock in moisture and gives the fish a lovely texture.
