  • 4 salmon fillets (skinless, 6 oz each)
  • 2 tbsp olive oil
  • 3 cloves garlic (minced)
  • 1 cup heavy cream
  • 1/2 cup sun-dried tomatoes (drained and chopped)
  • 1/4 cup grated Parmesan cheese
  • 1 tsp Italian seasoning
  • Salt and pepper (to taste)
  • Fresh basil (for garnish)

Instructions

  • Prep the salmon: Season the salmon fillets with salt and pepper on both sides.
  • Cook the salmon: Heat olive oil in a large skillet over medium-high heat. Place the salmon fillets in the pan, searing each side for about 4-5 minutes until golden brown and crispy. Remove and set aside.
  • Make the sauce: In the same skillet, add minced garlic and sauté until fragrant. Then, add the chopped sun-dried tomatoes, Italian seasoning, and heavy cream. Stir well to combine.
  • Add Parmesan: Stir in the grated Parmesan cheese, allowing it to melt into the sauce. Simmer the mixture for a few minutes until it thickens slightly.
  • Return the salmon: Place the cooked salmon fillets back into the skillet, spooning the creamy sauce over the top. Let everything simmer together for an additional 3-4 minutes.
