Ingredients
Scale
- 4 salmon fillets (skinless, 6 oz each)
- 2 tbsp olive oil
- 3 cloves garlic (minced)
- 1 cup heavy cream
- 1/2 cup sun-dried tomatoes (drained and chopped)
- 1/4 cup grated Parmesan cheese
- 1 tsp Italian seasoning
- Salt and pepper (to taste)
- Fresh basil (for garnish)
Instructions
- Prep the salmon: Season the salmon fillets with salt and pepper on both sides.
- Cook the salmon: Heat olive oil in a large skillet over medium-high heat. Place the salmon fillets in the pan, searing each side for about 4-5 minutes until golden brown and crispy. Remove and set aside.
- Make the sauce: In the same skillet, add minced garlic and sauté until fragrant. Then, add the chopped sun-dried tomatoes, Italian seasoning, and heavy cream. Stir well to combine.
- Add Parmesan: Stir in the grated Parmesan cheese, allowing it to melt into the sauce. Simmer the mixture for a few minutes until it thickens slightly.
- Return the salmon: Place the cooked salmon fillets back into the skillet, spooning the creamy sauce over the top. Let everything simmer together for an additional 3-4 minutes.
- Garnish and serve: Remove from heat, garnish with fresh basil, and serve immediately.

- Use fresh ingredients: For the best flavor, use high-quality salmon and freshly grated Parmesan. It makes all the difference!
- Don’t overcook the salmon: Salmon cooks quickly, and you want to avoid drying it out. Keep an eye on it and remove from heat once it’s firm and just cooked through.
- Adjust the sauce consistency: If your sauce is too thick, add a splash of vegetable broth or more cream to loosen it up.
