Instructions
- Preheat oven to 350°F (175°C) and line two baking sheets with parchment paper.
- Cream together butter and sugar in a large mixing bowl until light and fluffy.
- Add the egg, lemon zest, lemon juice, and vanilla extract. Beat until combined.
- In another bowl, whisk together the flour, baking soda, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until a dough forms.
- Gently fold in the blueberries and optional white chocolate chips, being careful not to crush the berries.
- Scoop rounded tablespoons of dough onto the prepared baking sheets, spacing 2 inches apart.
- Bake for 11–13 minutes, or until the edges are lightly golden.
- Cool on the sheet for 5 minutes, then transfer to a wire rack.
- For the glaze, whisk together the powdered sugar, lemon juice, and blueberry juice until smooth and pourable.
- Drizzle or spread the glaze over the cooled cookies and allow it to set before serving.
