  • 1 cup plain, full-fat yogurt – Adds creaminess and tenderizes the chicken.
  • 2 teaspoons black pepper – For a touch of heat.
  • 2 teaspoons kosher salt – Enhances all the flavors.
  • 2 tablespoons honey – Adds a hint of sweetness.
  • 4 cloves garlic, crushed – For that garlicky goodness.
  • 1 tablespoon lemon juice and zest of 2 lemons – The star of the show, providing tang and aroma.
  • ½ cup fresh basil leaves – The basil brings in freshness.
  • 2 tablespoons olive oil – Helps keep the chicken moist.
  • 2 lbs chicken breast, cut into 1” cubes – Chicken breast holds the marinade well.
  • Rice or crunchy bread to serve – Optional, but highly recommended as a side.

Instructions

Step 1: Prepare the Marinade

In a food processor, blend the yogurt, black pepper, salt, honey, crushed garlic, lemon juice and zest, and fresh basil until smooth. A few basil pieces left unblended add visual interest. Add olive oil and give it one last mix.

Step 2: Marinate the Chicken

Transfer the marinade to a large bowl or Ziploc bag, then add your chicken cubes. Stir to coat the chicken thoroughly, then cover and let marinate in the fridge for 24 hours. This overnight marination ensures the flavors fully absorb, making each bite tender and flavorful.

Step 3: Skewer and Prepare the Grill

When ready to cook, heat your grill to medium-high. Thread the chicken pieces onto metal skewers, leaving a bit of space between each piece for even cooking. Grease the grill with an oiled rag to prevent sticking.

Step 4: Grill to Perfection

Grill the kebabs for 4-5 minutes on each side, until they’re cooked through with a lightly charred exterior. Aim for an internal temperature of 165°F to ensure they’re safe to eat.

Tip: If you don’t have a grill, try using a cast iron skillet. Heat it on the stovetop, add a touch of oil, and cook the kebabs for the same amount of time. Alternatively, broil them on a wire rack for a similar effect.

Notes

  • Keep It Fresh: Use fresh basil for the best flavor. Dried basil won’t provide the same intensity.
  • Perfect Marination: Marinating overnight is key! If short on time, marinate for at least 6 hours to still achieve a great flavor profile.
  • Skewer Spacing: Leave a little room between the pieces on each skewer to ensure even cooking.
