Description

This homemade Kaiser bread recipe creates bakery-style rolls that are crusty on the outside and soft on the inside—perfect for sandwiches, burgers, and more. Easy to make with everyday ingredients and beginner-friendly steps.


Ingredients

  • 4 cups all-purpose flour
  • 2¼ teaspoons active dry yeast (1 packet)
  • 1 tablespoon granulated sugar
  • 1½ teaspoons salt
  • 1½ cups warm water (110°F/43°C)
  • 2 tablespoons vegetable oil
  • 1 egg white (for egg wash)
  • Sesame seeds or poppy seeds (optional, for topping)

Instructions

  1. In a large bowl, dissolve sugar in warm water, then sprinkle yeast over the top. Let sit for 5–10 minutes until foamy.
  2. Add flour, salt, and oil to the yeast mixture. Mix until a dough forms.
  3. Knead by hand or with a dough hook for 8–10 minutes until the dough is smooth and elastic.
  4. Transfer dough to a greased bowl, cover, and let rise for 1 hour or until doubled in size.
  5. Punch down the dough and divide into 8 equal pieces. Shape into balls.
  6. Use a Kaiser roll stamp or sharp knife to make a star pattern on each roll.
  7. Place rolls on a parchment-lined baking sheet. Cover and let rise for 30 minutes.
  8. Preheat oven to 425°F (220°C). Brush rolls with egg white and sprinkle with seeds if desired.
  9. Bake for 15–18 minutes until golden brown and hollow-sounding when tapped.
  10. Cool on a wire rack before serving.

Notes

  • If you don’t have a Kaiser roll stamp, score the top with a sharp knife in a star pattern.
  • For a softer crust, cover the rolls with a towel after baking.
  • You can freeze the dough after the first rise for later use.
  • Use bread flour instead of all-purpose flour for a chewier texture.
