This homemade Kaiser bread recipe creates bakery-style rolls that are crusty on the outside and soft on the inside—perfect for sandwiches, burgers, and more. Easy to make with everyday ingredients and beginner-friendly steps.

- 4 cups all-purpose flour
- 2¼ teaspoons active dry yeast (1 packet)
- 1 tablespoon granulated sugar
- 1½ teaspoons salt
- 1½ cups warm water (110°F/43°C)
- 2 tablespoons vegetable oil
- 1 egg white (for egg wash)
- Sesame seeds or poppy seeds (optional, for topping)
Instructions
- In a large bowl, dissolve sugar in warm water, then sprinkle yeast over the top. Let sit for 5–10 minutes until foamy.
- Add flour, salt, and oil to the yeast mixture. Mix until a dough forms.
- Knead by hand or with a dough hook for 8–10 minutes until the dough is smooth and elastic.
- Transfer dough to a greased bowl, cover, and let rise for 1 hour or until doubled in size.
- Punch down the dough and divide into 8 equal pieces. Shape into balls.
- Use a Kaiser roll stamp or sharp knife to make a star pattern on each roll.
- Place rolls on a parchment-lined baking sheet. Cover and let rise for 30 minutes.
- Preheat oven to 425°F (220°C). Brush rolls with egg white and sprinkle with seeds if desired.
- Bake for 15–18 minutes until golden brown and hollow-sounding when tapped.
- Cool on a wire rack before serving.
Notes
- If you don’t have a Kaiser roll stamp, score the top with a sharp knife in a star pattern.
- For a softer crust, cover the rolls with a towel after baking.
- You can freeze the dough after the first rise for later use.
- Use bread flour instead of all-purpose flour for a chewier texture.
