Instructions
Preheat the oven to 350°F or 175°C. Grease and flour a loaf pan.
In a medium bowl, whisk together the all-purpose flour, baking powder, baking soda, and salt. Set aside.
In a large bowl, beat the softened butter and granulated sugar until light, pale, and fluffy.
Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
Add the sour cream and milk to the butter mixture and mix until smooth and combined.
Gradually add the dry ingredients to the wet mixture, mixing just until the flour disappears.
Gently fold in the diced peaches and fresh raspberries, being careful not to crush the berries.
Pour the batter into the prepared loaf pan and smooth the top evenly.
Bake for 55 to 60 minutes, or until the top is golden and a toothpick inserted into the center comes out clean.
Allow the cake to cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.
In a small bowl, whisk together the powdered sugar and lemon juice until smooth and pourable.
Drizzle the lemon glaze over the cooled cake.
Garnish with fresh raspberries and mint leaves before slicing and serving.
