For Chipotle Salsa:

  • 2 tablespoons extra virgin olive oil
  • ½ small onion, finely diced
  • 2 garlic cloves, minced
  • 1 (15-ounce) can of finely diced tomatoes, drained
  • 3 chipotle chiles in adobo, minced
  • 2 tablespoons minced cilantro
  • 1 lime, juiced
  • Salt and pepper to taste

For Assembly:

  • 3 corn tortillas, lightly charred and warmed
  • 1 ½ cups canned black beans, drained and warmed
  • 3 fried eggs

Garnish/Toppings:

  • Crumbled queso fresco
  • Very thinly sliced iceberg lettuce
  • Fresh cilantro
  • Hot sauce
  • Lime wedges

Optional Substitutions:

  • For a milder salsa, replace chipotle chiles with roasted red peppers.
  • To make it gluten-free, ensure that the corn tortillas are certified gluten-free.
  • For a vegan version, replace eggs with scrambled tofu and skip the queso fresco.

Instructions

Step 1: Prepare the Chipotle Salsa

  1. Pour the olive oil into a skillet and place over medium-high heat.
  2. Add the finely diced onion and garlic, and sauté for 2-3 minutes until fragrant.
  3. Stir in the drained tomatoes and minced chipotle chiles, and continue to sauté for another 2-3 minutes.
  4. Season the mixture with salt and pepper, then remove from heat.
  5. Add the minced cilantro and lime juice, stir well, and set aside to cool.

Step 2: Assemble the Huevos Rancheros

  1. Place the warmed corn tortillas onto a serving platter.
  2. Spread a spoonful of chipotle salsa over each tortilla.
  3. Top each with a generous portion of the warmed black beans.
  4. Add a fried egg on top of each tortilla.
  5. Drizzle more salsa over the eggs, and season with salt and pepper.
