Description
Sweet, savory, and perfectly caramelized, these honey garlic butter roasted carrots are a delicious and easy vegetable side dish ideal for holidays or everyday meals.

1½ pounds carrots (6–8 medium), peeled and sliced
2 tablespoons unsalted butter, melted
2 tablespoons honey
2 cloves garlic, minced
1 tablespoon olive oil
½ teaspoon salt
¼ teaspoon black pepper
½ teaspoon dried thyme (or fresh thyme for garnish)
½ teaspoon paprika (optional)
1 teaspoon lemon juice (optional)
1 tablespoon fresh parsley, chopped (for garnish)
Instructions
Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it.
Peel and cut the carrots into uniform pieces (sticks or diagonal slices).
In a small bowl, whisk together the melted butter, honey, olive oil, minced garlic, salt, pepper, thyme, and paprika.
Place carrots in a large bowl and toss with the honey garlic butter mixture until evenly coated.
Spread the carrots in a single layer on the prepared baking sheet.
Roast for 20–25 minutes, flipping halfway, until tender and caramelized on the edges.
Remove from the oven and drizzle with lemon juice (if using).
Transfer to a serving dish and garnish with chopped fresh parsley or thyme. Serve warm.
Notes
Use baby carrots for quicker prep — no slicing required.
For vegan version, substitute butter with plant-based butter and honey with maple syrup.
Roast at 425°F for crispier edges.
Add a pinch of chili flakes for a spicy twist.
Don’t overcrowd the pan to avoid steaming instead of roasting.
