Description

Honey Buffalo Ranch Chicken Cottage Cheese Bowls are creamy, spicy-sweet protein bowls made with blended cottage cheese, buffalo sauce, honey, ranch seasoning, shredded chicken, crunchy celery and bell pepper, and melted cheddar—heated quickly and finished with green onion and extra buffalo drizzle.


Ingredients

  • 7 tbsp buffalo sauce
  • 1 tbsp honey
  • 2 tbsp Greek yogurt
  • 15 oz shredded chicken
  • 2½ tsp ranch seasoning
  • 2½ cups diced celery + bell pepper
  • 2½ oz shredded cheddar
  • Green onion, for topping
  • Extra buffalo drizzle, for topping

Instructions

  1. Blend the cottage cheese until smooth and glossy.
  2. In a bowl, mix buffalo sauce and honey until fully combined, then stir in Greek yogurt until creamy.
  3. Add shredded chicken and ranch seasoning, then mix until the chicken is evenly coated.
  4. Fold in the diced celery and bell pepper gently to keep the crunch.
  5. Portion into bowls and top with shredded cheddar.
  6. Heat in the microwave for 60–90 seconds, then rest for 2 minutes.
  7. Finish with green onion and an extra buffalo drizzle, then serve warm.

Notes

  • Blend cottage cheese completely for a thick, smooth base that stays creamy after heating.
