Let’s dive into this mouthwatering flatbread recipe!

Ingredients

Scale

For the Dough:

  • ¾ cup warm tap water (110°F)
  • 1 teaspoon active dry yeast
  • 1 ½ tablespoons olive oil
  • 1 teaspoon sugar
  • 2 ¼ cups all-purpose flour
  • ½ teaspoon salt

For the Toppings:

  • 8 ounces mozzarella cheese (sliced ¼ inch thick)
  • ½ cup sun-dried tomatoes packed in olive oil (roughly chopped)
  • ¼ cup black olives
  • 6 ounces feta cheese (crumbled)
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1 tablespoon fresh parsley (optional, for garnish)
  • 1 large egg
  • 1 tablespoon water
  • Non-stick cooking spray

Optional Substitutions:

  • Gluten-Free Dough: Swap regular flour with a gluten-free blend.
  • Vegan Option: Use vegan cheese and skip the egg wash.

Instructions

Step 1: Prepare the Dough

  1. Temper the Bowl: Start by filling a metal mixing bowl with hot tap water to warm it up. This will help the yeast activate properly. Set aside for a few minutes, then pour out the water and dry the bowl.
  2. Activate the Yeast: Pour ¾ cup of warm tap water (110°F) into the bowl and add 1 teaspoon of active dry yeast. Stir gently for 5-10 seconds, then let it sit for about 3 minutes until the mixture bubbles and foams.
  3. Mix the Dry Ingredients: In a separate bowl, sift together 2 cups of flour, ½ teaspoon of salt, and 1 teaspoon of sugar.
  4. Combine Wet and Dry: Add 1 ½ tablespoons of olive oil to the yeast mixture. Stir briefly, then gradually incorporate the flour mixture. Stir until the dough begins to form.
  5. Knead the Dough: Sprinkle a little flour onto your countertop and knead the dough for 4-5 minutes until smooth. Form the dough into a ball, place it back in the bowl, cover with a tea towel, and let it rest near the preheated oven for 5 minutes to rise.

Step 2: Assemble and Bake the Flatbread

  1. Preheat the Oven: Preheat your oven to 500°F (not broil) while the dough is rising.
  2. Roll the Dough: Once the dough has rested, divide it into two portions. Roll out each portion on a floured surface into a rectangular shape that fits your baking sheet or pizza pan.
  3. Prepare the Egg Wash: Whisk together 1 large egg and 1 tablespoon of water. Brush the edges of the dough lightly with this mixture to give it a golden crust during baking.
  4. Add the Toppings: Distribute the mozzarella slices evenly across both flatbreads, avoiding the egg-washed edges. Next, layer the sun-dried tomatoes, black olives, and crumbled feta cheese on top.
  5. Season: Sprinkle 1 teaspoon of dried basil and 1 teaspoon of dried oregano over the toppings for an extra burst of flavor.
  6. Bake: Place the flatbreads in the preheated oven and bake for 10 minutes, or until the edges are golden and crispy.
  7. Garnish and Serve: Remove from the oven, garnish with chopped fresh parsley (optional), slice, and serve immediately.

Notes

  • Use Fresh Mozzarella: Fresh mozzarella will melt beautifully and give you that perfect gooey texture.
  • Olive Oil for Extra Flavor: Drizzle a bit of extra virgin olive oil over the flatbread before serving for an authentic Mediterranean touch.
  • Make it Crispy: If you love crispy flatbread, bake it on a pizza stone or directly on the oven rack.
