Description

Welcome, baking enthusiasts! Today, we’re diving into the world of sweet-tart delights with a recipe that combines two irresistible flavors—lemon and blueberry. These Zesty Lemon Bars with Fresh Blueberries are a refreshing twist on the classic lemon bar, bursting with vibrant lemony goodness and juicy blueberries. Whether you’re looking for a summery dessert or a year-round treat, these bars are sure to brighten your day. Let’s get baking!

Ingredients

Scale
  • 1 cup all-purpose flour: The base of the buttery crust.
  • 1/2 cup unsalted butter, softened: Adds richness and tenderness to the crust.
  • 1/4 cup granulated sugar: Sweetens the crust and helps it brown perfectly.
  • 2 large eggs: These act as a binder for the filling.
  • 1 cup granulated sugar: Adds sweetness to the tart lemon filling.
  • 2 tablespoons all-purpose flour: Helps thicken the filling.
  • 1/2 teaspoon baking powder: Adds a bit of lift to the filling, making it light and airy.
  • 1/4 teaspoon salt: Enhances the flavor.
  • 2 tablespoons lemon juice: The star of the show, giving that perfect zing.
  • 1 teaspoon lemon zest: Adds an extra burst of lemon flavor.
  • 1/2 cup fresh blueberries: Provides a sweet, juicy contrast to the tangy lemon.

Optional Substitutions:

  • You can swap the all-purpose flour with almond flour for a gluten-free option.
  • Use coconut sugar or a sugar substitute to make the recipe refined-sugar-free.
  • Try raspberries instead of blueberries for a different fruity twist.

Instructions

Step 1: Preheat the Oven

Preheat your oven to 350°F (175°C). Grease an 8×8-inch baking dish to prevent the bars from sticking.

Step 2: Prepare the Crust

In a medium bowl, mix 1 cup of flour, 1/2 cup softened butter, and 1/4 cup sugar until it forms a soft dough. Press the dough evenly into the bottom of your prepared baking dish. Bake the crust for 15-18 minutes, or until it’s lightly golden.

Tip: For a crispier crust, let the dough chill for about 10 minutes in the fridge before baking.

Step 3: Prepare the Lemon Filling

While the crust is baking, whisk together 2 large eggs, 1 cup sugar, 2 tablespoons flour, baking powder, salt, lemon juice, and lemon zest until smooth and well combined.

Step 4: Fold in the Blueberries

Gently fold in 1/2 cup of fresh blueberries. Be careful not to crush them, as we want to preserve the burst of juiciness they provide in every bite.

Step 5: Pour the Filling Over the Crust

Once your crust is golden and slightly cooled, pour the lemon-blueberry filling over it.

Step 6: Bake Again

Return the baking dish to the oven and bake for 25-30 minutes, or until the filling is set and the top is lightly browned.

Step 7: Cool and Serve

Allow the bars to cool completely before slicing them. Garnish with extra blueberries and a dusting of powdered sugar for an elegant touch.

Notes

  • Use Fresh Lemons: Freshly squeezed lemon juice will give your bars a more vibrant flavor than bottled juice.
  • Room Temperature Ingredients: Make sure your butter is softened and eggs are at room temperature for a smoother batter.
  • Don’t Overbake: Keep an eye on the bars in the last few minutes of baking. You want the center to be set but not dry, so a slight jiggle is okay.
  • Chill Before Serving: For a cleaner cut and more defined layers, refrigerate the bars for about 30 minutes after they’ve cooled to room temperature.
