Ingredients

Scale

  • 1 pound prepared pizza dough
  • 3 skinless, boneless chicken breasts
  • 1 teaspoon kosher salt
  • 1/2 teaspoon freshly ground black pepper
  • 1 teaspoon garlic powder
  • 1 1/2 tablespoons olive oil
  • 3/4 cup water, or more as needed
  • 1 tablespoon all-purpose flour, or as needed for surface
  • 1/2 cup creamy Caesar dressing
  • 6 slices bacon, cooked and crumbled
  • 2 green onions, thinly sliced
  • 1 cup shredded Italian cheeses (such as mozzarella and provolone), divided
  • 3/4 cup shredded Parmesan cheese, divided
  • 1 large egg, beaten

Instructions

  1. Prep the Dough: Let pizza dough rest at room temperature for about 1 hour before using. This makes it easier to roll and shape.
  2. Cook the Bacon: Preheat your oven to 350°F (175°C). Lay bacon strips on a baking sheet lined with aluminum foil. Bake until browned and crisp, about 15 minutes. Once done, drain on paper towels and crumble.
  3. Cook the Chicken: Season chicken breasts with salt, pepper, and garlic powder. Heat a large ovenproof skillet over medium-high heat and add olive oil. Place the chicken in the skillet, seasoned side down, and cook until golden brown (about 5 minutes). Flip and cook another minute.
  4. Bake the Chicken: Add enough water to the pan to fill the bottom. Transfer the skillet to the oven and bake until the internal temperature reaches 165°F (74°C), about 17-20 minutes. Let the chicken cool, then chop into bite-sized pieces.
  5. Increase Oven Temperature: Once the chicken is done, increase the oven temperature to 400°F (200°C). Prepare a baking sheet with parchment paper.
  6. Shape the Dough: Sprinkle flour on a work surface. Divide the dough into three portions and roll each into a circle about 12-13 inches wide.
  7. Assemble the Bakes: Spread Caesar dressing evenly over each dough circle, leaving a 1-inch border. Sprinkle 2 tablespoons of Parmesan cheese over the dressing. Evenly distribute the chopped chicken, crumbled bacon, green onions, and shredded Italian cheeses over the dough.
  8. Roll the Bakes: Fold the sides of the dough slightly over the filling, then roll from the bottom to the top to form a log. Pinch the edges to seal, and place seam-side down on the baking sheet.
  9. Bake: Brush the dough with beaten egg, then sprinkle with the reserved Italian cheese blend and 1 tablespoon of Parmesan cheese. Bake in the oven until golden brown, about 20 minutes.

Notes

  • Room Temperature Dough: Allow the pizza dough to rest at room temperature for at least an hour before rolling it out. This helps make the dough more pliable and easier to shape.
  • Caesar Dressing: Make sure to use a thick Caesar dressing that clings to the chicken and dough. A watery dressing can lead to soggy bakes.
  • Bacon Tip: For extra crispiness, you can fry the bacon instead of baking it. This adds more texture to the filling.
