Instructions
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a medium bowl, mix oats, flour, baking powder, baking soda, salt, and cinnamon.
- In a large mixing bowl, cream together softened butter and brown sugar until light and fluffy. Add the egg and vanilla extract, mixing well.
- Gradually add the dry ingredients to the wet ingredients, mixing just until combined.
- Gently fold in the blueberries and chopped pistachios.
- Scoop tablespoon-sized portions of dough onto the baking sheet, spacing them about 2 inches apart.
- Bake for 12-15 minutes or until the edges are lightly golden and the centers are set.
- Remove from the oven and allow the cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
- Serve warm or store in an airtight container at room temperature for up to 3 days.
