Vegetables & Aromatics:

  • 1 large onion, diced (adds sweetness)
  • two huge carrots chopped (rich in beta-carotene)
  • 2. 2 celery stalks cut into pieces
  • Three cloves of garlic, chopped (immune-boosting)
  • One canned (14.5 OZ) diced tomatoes

Seasonings:

  • 2 tablespoons olive oil (healthy fats)
  • 1 teaspoon ground cumin (boosts warmth)
  • 1 teaspoon smokey flavoring paprika (adds smokey flavor)
  • 1/2 1 teaspoon of dried thyme (earthy scent)
  • 1/2 tsp dried rosemary
  • Black pepper and salt to taste

Optional Add-ins:

Instructions

Step1: Prepare Your Ingredients

  • Lentils should be rinsed with cold water till they are clear.
  • Dice potatoesonionscarrots, and celery.
  • Cut to mince the clove.

Step2: Saute Aromatics

  • Then, heat the olive oil in a large pan on medium flame.
  • Add onionscarrotscelery, and garlic. Sauté for 5-7 minutes until the garlic is softened.

Step3: Add Lentils and Potatoes

  • Incorporate the lentils as well as chopped potatoes. Then cook for two minutes in order to intensify the flavors.

Step4: Add Tomatoes, Broth, and Spices

  • Incorporate vegetables liquid as well as diced tomatoes..
