Ingredients

Scale
  • 1 1/2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 cup unsalted butter, melted
  • 1 large egg
  • 1/2 cup pineapplesauce (or pureed pineapple)
  • 1 teaspoon vanilla extract
  • 1/2 cup shredded coconut

For the Coconut Cream Cheese Frosting:

  • 8 oz cream cheese, softened
  • 1/4 cup unsalted butter, softened
  • 2 cups powdered sugar
  • 1/4 cup coconut milk
  • 1 teaspoon vanilla extract
  • 1/2 cup toasted coconut flakes for garnish

Instructions

  1. Preheat your oven to 350°F (175°C) and grease an 8×8-inch baking pan.
  2. In a medium bowl, whisk together the flour, granulated sugar, brown sugar, baking powder, baking soda, salt, cinnamon, and nutmeg.
  3. In a separate bowl, mix the melted butter, egg, pineapplesauce, and vanilla extract until well combined.
  4. Gradually add the wet ingredients to the dry ingredients, mixing until just combined. Fold in the shredded coconut.
  5. Pour the batter into the prepared baking pan and smooth the top.
  6. Bake for 20-25 minutes or until a toothpick inserted into the center comes out clean. Let it cool completely.
  7. For the frosting, beat the cream cheese and butter together until creamy. Gradually add powdered sugar, followed by coconut milk and vanilla extract, beating until smooth.
  8. Spread the coconut cream cheese frosting over the cooled bars and sprinkle with toasted coconut flakes.
  9. Chill the bars in the refrigerator for at least 1 hour before slicing and serving.

These steps are easy to follow and ensure that your bars come out perfectly every time. The key to success with this recipe is not over-mixing the batter, which helps keep the bars soft and tender.

Notes

To make the most of your Tropical Pineapple Coconut Cream Bars, here are a few helpful tips:

  • Use fresh pineapple for the pineapplesauce if possible. It gives a more vibrant flavor compared to canned pineapple.
  • Don’t skip chilling the bars after frosting them. This step helps the frosting set and makes slicing the bars much easier.
  • Toast the coconut flakes before sprinkling them on top. It adds a delicious crunch and enhances the coconut flavor.
