Ingredients
For the Marinade:
- 1/2 cup low sugar ketchup
- 1/4 cup coconut aminos (or Braggs liquid aminos, tamari, or low sodium soy sauce)
- 1/4 cup fresh pineapple juice
- 1/4 cup fresh pineapple chunks
- 2 Tbsps olive oil or avocado oil
- 3 fresh garlic cloves, minced
- 1 tsp apple cider vinegar
- 1–2 Tbsps hot sauce of your choice
- 1 Tbsp smoked paprika
- 1/2 tsp fine sea salt
For the Kabobs:
- 2 lbs boneless, skinless chicken or turkey thighs/breasts, chopped into 1 1/4-inch cubes
- 3 cups fresh pineapple, cubed
- **3 Anaheim, green bell, or poblano peppers, cubed
- 1 large red onion, cubed
- Bamboo skewers (soaked in water for 2 hours)
Optional Substitutions:
- Use tofu or tempeh for a vegetarian version.
- Replace coconut aminos with tamari for a gluten-free option.
- Swap out hot sauce for a milder version if you prefer less heat.
Instructions
Step 1: Prepare the Marinade
In a blender or food processor, combine the low sugar ketchup, coconut aminos, fresh pineapple juice, pineapple chunks, olive oil, minced garlic, apple cider vinegar, hot sauce, smoked paprika, and sea salt. Blend until very smooth.
Step 2: Marinate the Chicken
Place the chicken cubes in a large bowl and pour the marinade over. Mix well to ensure each piece is coated. Cover and let it marinate in the refrigerator for at least 6-8 hours or overnight for best results.
Step 3: Prep the Skewers
While the chicken marinates, soak the bamboo skewers in water to prevent them from burning on the grill.
Step 4: Assemble the Kabobs
Once marinated, thread the chicken pieces onto the skewers, alternating with pineapple chunks, peppers, and red onion.
Step 5: Grill the Kabobs
Preheat your grill to medium heat. Place the kabobs on the grill and cook for 5 minutes per side, or until the chicken is cooked through and has a nice char. Serve immediately!

- Use Fresh Pineapple: Fresh pineapple gives a juicier and more flavorful bite compared to canned.
- Let the Chicken Marinate Longer: Marinating overnight allows the flavors to penetrate deeper.
- Cut Ingredients Uniformly: Ensure all ingredients are cut into similar sizes for even cooking.
