  • 2 lb chicken thighs, boneless, skinless (breasts work as well)
  • 3 Tbsp fresh cilantro, chopped (for garnish)
  • 3 green onions, chopped (for garnish)
  • Marinade Ingredients:
    • 20 oz can pineapple rings + ¾ cup of juice (fresh or canned)
    • ⅓ cup soy sauce, low sodium preferred
    • 1 Tbsp sesame oil
    • 2 cloves garlic, minced, or 1 tsp garlic powder
    • 1 Tbsp fresh ginger, minced
    • 3 Tbsp brown sugar
    • ⅓ cup ketchup
    • 2 tsp tomato paste
    • ½ tsp red pepper flakes
    • ½ tsp nutmeg
    • ¼ tsp chili powder

Optional Ingredients:

  • Long grain white rice (to serve alongside)
  • Avocado slices (for added creaminess)

Instructions

Step 1: Prepare the Marinade

Mix all the marinade ingredients in a bowl and whisk thoroughly. Set aside ½ of the marinade for basting and refrigerate.

Step 2: Marinate the Chicken

Pat the chicken dry, then place it in a large ziplock bag or deep bowl. Pour half of the marinade over the chicken, ensuring it’s well-coated. Let it marinate in the refrigerator for at least 20 minutes or up to 24 hours for a deeper flavor.

Step 3: Preheat the Grill

Heat your grill to medium-high heat. Brush and clean the grill grates before placing the chicken to prevent sticking.

Step 4: Grill the Chicken

Place the chicken on the grill, discarding the marinade in the bag. Grill for 8-10 minutes per side, turning occasionally, until the internal temperature reaches 165ºF. Baste with the reserved marinade during the last few minutes.

Step 5: Grill the Pineapple Rings

In the last 4 minutes of grilling, place the pineapple rings on the grill until they develop a nice caramelized char.

Step 6: Serve and Enjoy

Let the chicken rest for 5 minutes before serving. Garnish with fresh cilantro and green onions, and enjoy over a bed of white rice or with a side of avocado slices.
