2 large chicken breasts
2 tablespoons olive oil
Salt and pepper to taste
1 teaspoon garlic powder
1 teaspoon Italian seasoning
1 pound fettuccine pasta
2 tablespoons butter
3 cloves garlic, minced
2 cups heavy cream
1 cup grated Parmesan cheese
1/2 cup chicken broth
Fresh parsley, chopped (for garnish)
Instructions
Drizzle olive oil over the chicken breasts and season with salt, pepper, garlic powder, and Italian seasoning. Let marinate for 10 minutes.
Preheat the grill to medium-high heat. Grill the chicken for 6-8 minutes on each side or until fully cooked (165°F internal temperature). Set aside and let rest.
Bring a large pot of salted water to a boil. Cook fettuccine according to package instructions (8-10 minutes). Drain and set aside.
In a large skillet, melt butter over medium heat. Add minced garlic and sauté for 1 minute until fragrant.
Pour in heavy cream and chicken broth. Stir well and let simmer for 3-4 minutes.
Add Parmesan cheese gradually, stirring continuously until melted and the sauce thickens. Season with salt and pepper to taste.
Add the cooked fettuccine to the sauce and toss to coat evenly.
Slice the grilled chicken and place it over the pasta. Garnish with fresh parsley and extra Parmesan.
Serve immediately while hot and creamy.
