  • 8 ounces mushrooms, sliced
  • 1 medium onion, sliced (the sweeter, the better)
  • 2 tablespoons olive oil
  • Salt and pepper, to taste
  • 4 tablespoons butter
  • 4 slices of bread of choice
  • 1 cup gouda, shredded

Instructions

  • Preheat your oven to 400°F (200°C).
  • On a baking sheet, toss sliced mushrooms and onion in olive oil. Sprinkle with a few pinches of salt and pepper. Bake in the oven for about 20 minutes, or until roasted to your preference.
  • In a skillet on the stovetop, melt 4 tablespoons of butter over medium heat.
  • While the butter is melting, assemble the sandwiches. On one slice of bread, layer shredded gouda, roasted mushrooms, and onions, then more gouda. Salt and pepper to taste. Top with the other slice of bread and lightly press together.
  • In the melted butter, place one sandwich down for one second, then gently flip it over to the other side. Repeat with the other sandwich.
  • Cook for about 2 minutes, until lightly browned, then gently flip the sandwich on the other side and cook for an additional 2–3 minutes, or until the cheese is melted and the sandwich is browned to your preference.

Notes

For perfectly roasted mushrooms and onions, make sure to spread them evenly on the baking sheet. Overcrowding can lead to steaming instead of roasting, which prevents that delicious caramelization we’re after. If you prefer an extra crispy sandwich, use a heavier pan or press the sandwich down lightly with a spatula during cooking. And, for a flavor boost, try adding a sprinkle of garlic powder or a pinch of smoked paprika to your butter before cooking!
