For the Burrito Filling:
- 3 cups shredded rotisserie chicken
- 4-ounce can mild diced green chiles, drained
- ½ cup sour cream
- 1 cup shredded Monterey Jack cheese
- ½ teaspoon salt

For the Assembly:
- 6 burrito-sized flour tortillas (10-inch)
- 2 cups shredded cheese (sharp cheddar and Monterey Jack blend)
- ¼ cup thinly sliced green onions

Instructions
Step 1: Prepare the Green Burrito Sauce
- Heat the vegetable oil in a medium saucepan over low heat.
- Whisk in the flour, cooking and whisking constantly for about 1-2 minutes until it starts to lightly brown.
- Gradually whisk in the chicken broth, enchilada sauce, cumin, salt, and pepper.
- Increase the heat to medium-high, bringing the mixture to a boil.
- Once boiling, reduce the heat to a simmer and whisk until the sauce thickens. Set it aside.
Step 2: Create the Burrito Filling
- In a large mixing bowl, combine the shredded chicken, diced green chiles, sour cream, and shredded Monterey Jack cheese.
- Season the mixture with salt and freshly ground black pepper.
Step 3: Assemble the Burritos
- Preheat your oven to 350°F and grease a 13×9-inch baking dish with non-stick cooking spray.
- Warm the flour tortillas in the microwave for 20-30 seconds between paper towels.
- Divide the chicken filling evenly between the tortillas, folding the edges over and rolling them up.
- Place the burritos seam-side down in the prepared baking dish.
- Pour the green burrito sauce over the burritos and cover the dish with foil.
