  • 6 tomatoes or 450g of tomato sauce
  • 1 large zucchini, diced
  • 1 onion, finely chopped
  • 1 clove of garlic, minced
  • Salt, pepper, and herbs (oregano, basil, parsley)

Substitutions:

  • For gluten-free, use gluten-free pasta.
  • For dairy-free, swap the cheese with a plant-based alternative or skip entirely.

Instructions

Step 1: Prepare the Tomato Sauce

Start by heating a pan over medium heat. Add the chopped tomatoes (or tomato sauce) and cook on low heat until they soften and form a sauce. Stir in the chopped onion, minced garlic, salt, pepper, and your choice of herbs. Let it simmer for about 15 minutes.

Step 2: Cook the Chicken and Zucchini

While the tomato sauce is simmering, heat another pan over medium heat and cook the ground chicken until browned. Season with salt and pepper. In the same pan, sauté the diced zucchini until it starts to soften.

Step 3: Cook the Pasta

Boil water in a large pot and cook the whole wheat pasta according to package instructions (around 9-11 minutes for al dente). Once cooked, drain the pasta and set it aside.

Step 4: Combine and Bake

Mix the cooked pasta with the tomato sauce, chicken, zucchini, and half of the grated cheese. Transfer the mixture into a baking dish and sprinkle the remaining cheese on top.

Preheat your oven to 180°C (350°F) and bake for about 20 minutes, or until the cheese is melted and bubbly.
