  • 2 lbs ground beef (80/20 for some good flavor!)
  • 1 cup bread crumbs
  • 1 cup grated Parmesan cheese, plus a bit more for that golden crust
  • 2 large eggs
  • 1 small onion, finely chopped
  • 3 cloves garlic, minced
  • 1/4 cup fresh parsley, chopped
  • 1 tbsp fresh thyme, chopped
  • 1 tbsp fresh oregano, chopped
  • 2 tsp salt
  • 1 tsp black pepper
  • 2 tbsp Worcestershire sauce
  • 1/2 cup milk
  • 1/2 cup ketchup, plus 2 tbsp for topping

  1. Preheat Your Oven to 375°F (190°C): This temperature ensures a crispy, golden crust while keeping the meatloaf tender inside.
  2. Mix the Ingredients: In a large mixing bowl, gently combine the ground beef, bread crumbs, Parmesan cheese, eggs, onion, garlic, parsley, thyme, oregano, salt, pepper, Worcestershire sauce, and milk. Be careful not to overwork the meat to keep it tender.
  3. Shape the Meatloaf: Once mixed, shape the mixture into a loaf. Place it into a greased baking pan, or for a firmer crust all around, shape it directly onto a baking sheet.
  4. Top with Ketchup and Cheese: Spread the 2 tablespoons of ketchup over the top of the meatloaf. This adds a tangy sweetness. Then, sprinkle an extra handful of Parmesan cheese over the ketchup for that irresistible golden crust.
  5. Bake: Place the meatloaf in the preheated oven and bake for about 1 hour, or until the internal temperature reaches 160°F (71°C). The meatloaf should be firm, and the cheese crust should be golden and crispy.
  6. Rest and Serve: Let the meatloaf rest for 10 minutes before slicing. This allows the juices to redistribute, making it easier to slice and ensuring each piece is juicy and flavorful.
