  • 2 tbsp milk
  • ¼ cup grated Parmesan cheese
  • 1 egg
  • 2 tbsp chopped fresh parsley
  • 1 tsp Italian seasoning
  • ½ tsp salt
  • 3 mozzarella cheese strings, cut into ½-inch slices

Topping:

  • ½ cup marinara sauce
  • 2 tbsp panko bread crumbs
  • 1 ½ tbsp grated Parmesan cheese
  • 1 tbsp butter, melted
  • 1 tbsp chopped fresh parsley
  • 1 cup shredded mozzarella cheese

Instructions

  1. oven to 400°F (200°C). Line a loaf pan with foil and lightly grease it using cooking spray.
  2. In a skillet over medium heat, sauté the onion and minced garlic in olive oil until soft. Let cool.
  3. In a bowl, mix together the ground chicken, seasoned bread crumbs, milk, grated Parmesan cheese, egg, chopped parsley, Italian seasoning, salt, and the cooled onion and garlic mixture. Ensure everything is well combined.
  4. Transfer the mixture into the prepared loaf pan, shaping it into an 8×4-inch loaf.
  5. Spread the marinara sauce over the top of the meatloaf.
  6. Bake in the preheated oven for 45 minutes.
  7. Meanwhile, in a bowl, combine the panko bread crumbs, Parmesan cheese, melted butter, and chopped parsley.
  8. Remove the meatloaf from the oven, sprinkle shredded mozzarella cheese on top, followed by the breadcrumb mixture.
  9. Return the meatloaf to the oven and bake for an additional 15-20 minutes, or until the center reaches an internal temperature of 165°F (75°C).
  10. Allow the meatloaf to cool for 10 minutes before slicing and serving.

Cooking Tips:

  • When mixing the meatloaf ingredients, be careful not to overwork the mixture as this can make the meatloaf dense.
  • For a crispier crust, you can broil the meatloaf for the last 2-3 minutes of cooking.
  • If you prefer a spicier flavor, add a pinch of red pepper flakes to the meatloaf mixture.

Notes

  • Use fresh ingredients: Fresh parsley and Parmesan will enhance the flavor of your meatloaf.
  • Proper mixing: Mix the ingredients just until combined. Overmixing can make the meatloaf tough.
  • Resting time: Allow the meatloaf to rest before slicing. This helps retain its moisture and makes slicing easier.
