- 2 French bread baguettes (10–1/2 ounces each)
- 4 garlic cloves
- 1/4 cup olive oil
- 1 teaspoon salt
Instructions
- Prepare the Salad: In a large bowl, combine the shredded rotisserie chicken, cubed mozzarella, halved grape tomatoes, coarsely chopped artichoke hearts, sliced Greek olives, and minced fresh basil.
- Make the Dressing: In a small bowl, whisk together the olive oil, minced garlic, salt, and coarsely ground pepper. Drizzle this dressing over the chicken mixture and toss to coat evenly. Refrigerate until ready to serve.
