Description

This Fluffy Cottage Cheese Cloud Bread is a low-carb, high-protein, gluten-free alternative to traditional bread. Light and airy, it’s ideal for sandwiches, mini pizzas, or enjoying on its own.

½ cup cottage cheese (blended until smooth)
¼ teaspoon cream of tartar
½ teaspoon salt
1 tablespoon cornstarch or arrowroot powder (optional)

Instructions

Preheat oven to 300°F (150°C) and line a baking sheet with parchment paper.
Separate egg whites and yolks into two bowls.
Add cream of tartar to egg whites and beat until stiff peaks form.
In the yolk bowl, mix blended cottage cheese, salt, cornstarch (if using), and honey or sweetener (if using) until smooth.
Gently fold the whipped egg whites into the yolk mixture in three additions using a spatula.
Scoop mixture onto baking sheet to form 6–8 rounds and shape evenly.
