Shrimp Rice Bowl

  • 1/4 cup diced red onion
  • 1/2 cup diced cherry tomatoes
  • 1 jalapeño sliced (optional)
  • Fresh chopped cilantro
  • 1 large avocado, sliced
  • 1 (15 ounce) can fire-roasted corn, drained
  • To serve: Homemade creamy jalapeño ranch or store-bought cilantro ranch dressing

Instructions

Step 1: Marinate the Shrimp

  1. In a medium-sized bowl, mix together the olive oil, lime juice, smoked paprika, cumin, chili powder, garlic powder, salt, black pepper, and cayenne pepper.
  2. Add the fresh chopped cilantro and whisk until everything is well combined.
  3. Pat the shrimp dry using a paper towel and add it to the bowl with the marinade.
  4. Toss the shrimp until fully coated, cover, and marinate in the refrigerator for at least 15 minutes to let the flavors meld.

Step 2: Prepare the Rice

  1. While the shrimp is marinating, cook your rice according to package instructions. For a quicker option, use minute rice, which takes only 5 minutes to prepare.
  2. Once cooked, fluff the rice with a fork and keep it warm.

Step 3: Cook the Shrimp

  1. Heat a large skillet over medium-high heat (no oil needed, as the marinade has plenty of oil).
