  • 1 small yellow onion, diced

  • 32 oz chicken broth (about 4 cups)
  • 1 pint heavy cream
  • 2 tablespoons Dijon mustard
  • 4 cups cooked and cubed chicken (approximately 1 rotisserie chicken)
  • 8 oz cubed ham
  • 8 oz block cream cheese, cubed and softened
  • Shredded Swiss cheese for serving
  • Homemade croutons (store-bought works fine too!)

Instructions

Step 1:
In a large stockpot, melt the butter over medium heat. Add the diced onions, carrots, celery, and garlic. Stir frequently and cook for about 10 minutes or until the vegetables are softened.
