  • 3/4 tsp kosher salt, divided
  • 2 tbsp olive oil, divided

  • 2 tbsp chopped parsley, plus more for garnish
  • 1 small chicken breast, cut in half lengthwise (thin)
  • 1 tsp paprika
  • 1 tsp garlic powder, divided
  • 1/2 tsp onion powder
  • 1 ball pizza dough (enough for 1 12-inch pizza)
  • 2 cups shredded mozzarella cheese
  • 1/2 cup grated or shredded parmesan cheese, divided
  • 2 tbsp balsamic glaze

Optional Substitutions:

  • For a vegetarian option, substitute chicken with roasted vegetables such as zucchini or bell peppers.
  • To make it gluten-free, use a gluten-free pizza crust.

Instructions

Step 1: Prepare the Oven and Pizza Stone

  • Preheat your oven to 500°F (or as hot as it will go). Place a pizza stone in the oven while it heats.

Step 2: Make the Bruschetta Topping

  • In a small bowl, mix tomatoes, 2 tsp olive oil, 1/2 tsp salt, 1/2 of the minced garlic, and chopped parsley. Toss gently to combine and set aside at room temperature.

Step 3: Cook the Chicken

  • Sprinkle the chicken breast evenly with paprika, garlic powder, onion powder, and 1/4 tsp salt.
  • Heat a non-stick skillet over medium-high heat and add 2 tsp olive oil.
  • Cook the chicken until it’s golden brown on both sides and thoroughly cooked (about 3-4 minutes per side).
  • Allow the chicken to cool slightly, then cut it into bite-sized pieces.

Step 4: Prepare the Pizza Crust

  • Cover a pizza peel generously with flour. Use your hands to stretch the pizza dough into a 12-inch circle.
  • Place the dough on the peel and ensure it can slide around.
  • Brush the dough with remaining 1 tbsp olive oil and 1/4 tsp salt.

Step 5: Assemble the Pizza

  • Sprinkle mozzarella cheese evenly over the crust, followed by 1/2 of the parmesan cheese.
  • Distribute the cooked chicken evenly over the cheese.
  • Slide the pizza onto the hot pizza stone and bake until golden brown and bubbly (approximately 8-10 minutes).

Step 6: Add the Bruschetta Topping

  • Remove the pizza from the oven and immediately add the bruschetta topping.
  • Sprinkle with the remaining parmesan cheese and drizzle with balsamic glaze.
