Instructions
Step1: Prepare the Crust
Preheat your oven to 325°F (160°C).
Combine graham cracker crumbs, sugar, and melted butter in a bowl.
Press the mixture firmly into the bottom of a 9-inch springform pan.
Bake for 10 minutes, then let cool completely.
Step2: Make the Cheesecake Layer
In a mixing bowl, beat softened cream cheese until smooth.
Add powdered sugar and vanilla extract, mixing well.
Gently fold in whipped cream.
Spread the cheesecake mixture evenly over the cooled crust and refrigerate.
Step3: Prepare the Blueberry Mousse
Cook blueberries, sugar, and lemon juice over medium heat in a saucepan until thickened (about 10 minutes).
Blend and strain the mixture to remove seeds.
Dissolve gelatin in cold water, let bloom for 5 minutes, then stir it into the warm blueberry mixture.
Cool to room temperature, fold in whipped cream, and spread the mousse over the cheesecake layer.
Refrigerate for at least 4 hours until set.
Step4: Add the Topping
Gently warm the blueberry preserves and spread them over the mousse layer.
Garnish with fresh blueberries and whipped cream.
Serve chilled.
Notes
Use room-temperature cream cheese to avoid lumps.
For a firmer crust, press the mixture with the back of a spoon or a flat-bottomed glass.
Ensure the blueberry mousse is fully set before adding the topping.
