Description
Bisquick Chicken and Dumplings is a cozy 30-minute comfort dinner made with rotisserie chicken, creamy chicken bouillon broth, and soft Bisquick dumplings steamed until fluffy and tender.

4 1/2 cups cold water
1 level tablespoon Knorr Chicken Bouillon Powder
2 1/2 cups Bisquick Baking Mix, divided
3/4 cup milk
1 cooked rotisserie chicken, skin and bones removed, shredded or chopped
Black pepper, optional, for serving
Fresh parsley, optional, for garnish
Instructions
In a large heavy-bottomed pot or Dutch oven, whisk together the cold water, chicken bouillon powder, and 1/2 cup Bisquick until smooth and lump-free.
In a medium bowl, stir together the remaining 2 cups Bisquick and milk until a soft dumpling dough forms.
Remove the skin and bones from the rotisserie chicken, then shred or chop the meat into bite-sized pieces.
Place the pot over medium-high heat and continuously whisk the broth mixture until it thickens and begins to bubble, about 10 minutes.
Stir the shredded chicken into the thickened broth and reduce the heat to medium.
Use a tablespoon or small scoop to drop golf-ball-size portions of dumpling dough into the bubbling broth.
Cover the pot with a lid and cook for 20 to 25 minutes without stirring, keeping the lid closed as much as possible so the dumplings steam properly.
Serve hot with black pepper and fresh parsley if desired.
Notes
Use cold water when whisking the broth base to help prevent lumps.
Do not overmix the dumpling dough; stir only until a soft dough forms.
Keep dumplings about golf-ball size because they expand while cooking.
Keep the lid closed while the dumplings cook so they steam properly and stay fluffy.
Serve hot with a side salad, steamed vegetables, biscuits, or crusty bread.
Add fresh parsley on top for extra flavor and color.
Store leftovers in an airtight container in the refrigerator for up to 3 days.
Reheat gently on the stovetop over low heat to keep the dumplings soft.
Add a splash of broth or milk while reheating if the mixture becomes too thick.
For best freezer texture, freeze the chicken broth mixture separately and make fresh dumplings when serving.
