  • 2 cups uncooked long grain white rice
  • 4 cups chicken or vegetable broth
  • 1 cup frozen peas and carrots mix
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce (optional)
  • 1 tablespoon sesame oil
  • 2 large eggs, beaten
  • 1 cup cooked and diced chicken, ham, or tofu
  • Salt and pepper to taste
  • Green onions, sliced for garnish

Instructions

Step 1: Preheat the Oven

Preheat your oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish to prevent sticking.

Step 2: Prepare the Ingredients

Spread the uncooked rice evenly across the bottom of the prepared baking dish. Scatter the frozen peas, carrots, diced onion, and minced garlic over the rice.

Step 3: Mix the Broth and Sauces

In a medium bowl, whisk together the chicken or vegetable broth, soy sauce, oyster sauce (if using), and sesame oil. Pour this flavorful mixture over the rice and veggies, making sure everything is well-distributed.

Step 4: Bake the Rice

Cover the dish tightly with aluminum foil and bake for 45 minutes. The rice should absorb all the liquid and become tender.

Step 5: Add the Eggs and Protein

Once the rice is cooked, remove the dish from the oven. Pour the beaten eggs over the rice and stir in your cooked and diced protein (chicken, ham, or tofu). The residual heat will cook the eggs perfectly, creating that scrambled texture.

Step 6: Season and Garnish

Finally, season with salt and pepper to taste, and garnish with freshly sliced green onions before serving.
