Instructions
- Preheat oven to 350°F (175°C). Grease and flour three 9-inch round cake pans and line the bottoms with parchment paper.
- In a large bowl, sift together flour, sugar, baking soda, cocoa powder, and salt.
- In another bowl, whisk together oil, buttermilk, eggs, red food coloring, vinegar, and vanilla until smooth.
- Gradually mix the dry ingredients into the wet mixture until the batter is smooth and lump-free.
- Divide batter evenly into prepared pans and bake for 25–30 minutes or until a toothpick comes out clean. Cool completely.
- For the frosting, beat cream cheese and butter until creamy. Gradually add powdered sugar, then mix in vanilla until fluffy.
- Assemble the cake by layering cake, frosting, and sliced strawberries. Repeat with the next layers.
- Frost the outside of the cake, decorate with whipped cream, and garnish with whole strawberries.
- Chill for 30 minutes before slicing and serving.
