Description

Welcome, food lovers! If you’re looking for the ultimate comforting, cheesy, and delicious meal, you’re in the right place. Our Crockpot Cheesy Chicken Spaghetti is designed for busy weeknights when you crave a delicious, hassle-free dinner. Packed with tender chicken, gooey cheese, and perfectly cooked spaghetti, this dish will bring joy to your dining table.

Ingredients

Scale

  • 3 chicken breasts – whole or cut into large chunks
  • 1 (10 oz.) can diced tomatoes with green chiles – adds a spicy kick
  • 1 can cream of chicken soup – creamy base for the sauce
  • 1 can cream of mushroom soup – deepens the flavor
  • 1/2 onion, diced – aromatic and flavorful
  • 2 tsp minced garlic – for a savory depth
  • 2 tsp Italian seasoning – a blend of herbs for balance
  • 4 oz cream cheese, diced – creamy and tangy
  • 2 cups shredded cheddar cheese – brings in the cheesy richness
  • 1 package (16 oz.) spaghetti – cooked separately and added

Instructions

  1. Prepare the Crockpot
Place chicken, diced tomatoes, both soups, diced onion, minced garlic, and Italian seasoning in the crockpot. This mix will become the sauce that flavors the entire dish.
  2. Cook the Chicken
Cover and set the crockpot to high for 3–4 hours or low for 6–8 hours. The chicken should be tender and easy to shred by the end of the cooking time.
  3. Shred the Chicken
Remove the cooked chicken breasts and shred them with two forks. Return the shredded chicken to the crockpot, mixing it back into the sauce.
  4. Add the Cheese
Add diced cream cheese and shredded cheddar to the crockpot. Stir to combine, and cook on low for another 20–30 minutes until the cheese is fully melted.
  5. Cook the Spaghetti
Meanwhile, cook the spaghetti in a pot of boiling water according to package instructions. Drain and set aside.
  6. Combine and Serve
Stir the cooked spaghetti into the crockpot, ensuring it’s well coated with the cheesy mixture. Serve hot and enjoy the comfort of cheesy goodness.

Notes

  • For Extra Creaminess: Swap half the cheddar cheese with mozzarella for an added gooey texture.
  • Boosting Flavor: A pinch of smoked paprika or chili powder can add a subtle kick.
  • Thicker Sauce: If you prefer a thicker consistency, reduce the cooking time on the final cheese-melting step to 15 minutes.
