1 large red onion, thinly sliced
½ cup apple cider vinegar

1 ½ tsp salt
For the Salsa Verde:
6 tomatillos, husks removed
1 yellow onion, quartered
1 jalapeño, seeded
¼ cup water
1 tsp sugar
Other Ingredients:
12 tbsp prepared bean dip
8 oz Monterey Jack cheese, grated
¼ cup cotija cheese, crumbled
¼ cup cilantro, chopped
12 mini flour tortillas (street taco size)

Step 1: Preparing the Pulled Pork
Massage the achiote paste mixed with lime juice over the pork roast. Season generously with Tajín seasoning. Place in a crockpot along with the chopped onion and water. Cook on low for 6-8 hours until the meat is fork-tender. Once cooled, shred the pork, reserving 1-2 cups for the pizzas. (The rest can be stored for another meal, like burritos.)
Step 2: Making the Pickled Red Onions
While the pork cooks, prepare your pickled onions. In a medium bowl, mix together the vinegar, sugar, and salt. Add the thinly sliced onions, making sure they’re submerged in the liquid. Stir every 15 minutes for 1 hour, ensuring all the onions are well-pickled.
Step 3: Preparing the Salsa Verde
Preheat your broiler and place the tomatillos, onion, and jalapeño on a baking sheet. Broil until charred, then blend with water and sugar until smooth. This salsa verde adds a fresh, tangy kick to the pizzas.
