- 3 lbs Yukon Gold potatoes, thinly sliced
- 3 tbsp butter
- 1 head roasted garlic, mashed
- ¼ cup all-purpose flour
- 1½ cups whole milk, at room temperature
- 1 cup vegetable or chicken broth
- 1½ cups sharp cheddar cheese (½ white, ½ yellow), divided
- 1 tbsp fresh rosemary, chopped
- 1 tbsp fresh thyme leaves
- Salt and black pepper, to taste
- 1 tbsp Garlic of Eden seasoning
- 1 large yellow onion, sliced into rings
- 2 tbsp flour (for onion coating)
- 4 cups vegetable oil (for frying)
- 1 tsp kosher salt
- Fresh parsley and thyme for garnish
Instructions
- Preheat oven to 375°F. Grease a 9×13” baking dish with butter or oil.
- Melt butter in a saucepan over medium heat. Add flour and whisk for 1 minute to form a roux.
- Gradually whisk in milk and broth. Cook 5–8 minutes until thickened.
- Stir in roasted garlic, herbs, seasoning, salt, and pepper. Remove from heat and add 1 cup cheese. Stir until melted.
- Layer sliced potatoes evenly in the baking dish.
- Pour the sauce over the potatoes. Top with remaining ½ cup of cheddar.
- Cover with foil and bake for 50 minutes. Remove foil and bake uncovered for 15 minutes until bubbling and golden.
- While baking, heat oil to 350°F. Toss sliced onions in flour and fry in batches for 2–5 minutes until golden. Drain and season with salt.
- Top the baked potatoes with crispy fried onions and garnish with fresh herbs. Serve hot.

- Use a mandoline for even potato slices to ensure uniform cooking.
