  • 1 teaspoon paprika
  • 1 teaspoon Italian seasoning
  • 5 tablespoons unsalted butter, divided
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 cup (240ml) chicken broth
  • 1/2 cup (125ml) heavy whipping cream
  • 1/2 cup shredded mozzarella
  • 4 cups baby spinach
  • 1 tablespoon freshly grated Parmesan, for serving
  • 1 teaspoon red chili pepper flakes, optional

Instructions

Step 1: Prepare the Gnocchi

In a large pot of boiling salted water, cook gnocchi according to the package instructions. Drain well and set aside.

Step 2: Cook the Chicken

Season chicken thighs with salt, pepper, paprika, and Italian seasoning. Melt 2 tablespoons of butter in a large skillet over medium heat. Add chicken thighs in a single layer and cook until golden brown and cooked through (about 4-5 minutes per side), ensuring the internal temperature reaches 165°F (74°C). Remove chicken from the skillet and set aside.

Step 3: Sauté Onions and Garlic

In the same skillet, melt the remaining 3 tablespoons of butter. Add diced onion and cook, stirring frequently until tender, about 2-3 minutes. Stir in minced garlic and cook until fragrant, about 1 minute.

Step 4: Prepare the Creamy Sauce

Gradually whisk in chicken broth, and cook, whisking constantly for 2 minutes until it slightly thickens. Stir in the heavy cream and shredded mozzarella until combined and thickened, about 1-2 minutes. Season with salt and pepper to taste.

Step 5: Combine and Serve
