Ingredients
For The Salmon Fillets:
- 2 tablespoons olive oil
- 6 skin-on salmon fillets (4–5 oz each), at room temperature
- Salt and freshly ground black pepper, to taste
For The Lemon Garlic Cream Sauce:
- 1 tablespoon butter
- 1 cup half & half (substitute with heavy cream or low-fat evaporated milk)
- ½ tablespoon all-purpose flour
- ⅓ cup grated Parmesan cheese
- 1 lemon, zested and juiced
- 3 cloves garlic, minced
- 1 teaspoon dried dill
- ¾ teaspoon dried thyme
- Salt and freshly ground black pepper, to taste
- Lemon slices and fresh parsley, for garnish
Optional Substitutions:
- For a dairy-free version, substitute half & half with coconut milk.
- Use gluten-free flour for those with gluten sensitivities.
Instructions
Step 1: Prepare the Salmon
Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Season the salmon fillets with salt and pepper. Place them in the skillet, skin-side down, and cook for about 6 minutes without moving them to achieve a nice crispy skin.
Step 2: Flip and Finish Cooking
Once the salmon is cooked three-quarters of the way through, flip the fillets carefully using a spatula. Cook for another 2 minutes or until fully cooked. Remove the fillets from the skillet and set aside.
Step 3: Make the Lemon Garlic Cream Sauce
In a mixing bowl, whisk together the half & half, flour, Parmesan, lemon zest, juice, garlic, dill, thyme, salt, and pepper. Melt the butter in the same skillet over medium heat. Add the sauce mixture and bring it to a boil. Then reduce the heat and let it simmer for a few minutes until it thickens.
Step 4: Combine and Serve
Return the salmon fillets to the skillet, allowing them to simmer in the sauce for 2-3 minutes until heated through. Spoon the creamy sauce over the salmon. Garnish with lemon slices and freshly chopped parsley before serving.
