Cool Whip Pineapple Fluff is a creamy, no-bake tropical dessert made with crushed pineapple, Cool Whip, vanilla pudding, and marshmallows. It’s light, fluffy, and perfect for summer parties or potlucks.

- 1 (8-ounce) tub Cool Whip, thawed
- 1 (3.4-ounce) package instant vanilla pudding mix
- 1 cup cottage cheese or 8 ounces cream cheese, softened
- 1/2 teaspoon vanilla extract
- A pinch of salt
- 1 (20-ounce) can crushed pineapple, drained well (reserve 2 tbsp juice)
- 1 cup mini marshmallows
- 1/2 cup shredded sweetened coconut (optional)
- 1/2 cup chopped pecans or walnuts (optional)
- Whipped cream, maraschino cherries, toasted coconut flakes, crushed graham crackers or vanilla wafers (for garnish)
Instructions
- In a large bowl, beat softened cream cheese (or blend cottage cheese) until smooth and creamy.
- Add the instant vanilla pudding mix and the reserved pineapple juice. Blend until smooth and thickened.
- Fold in the drained crushed pineapple, keeping small chunks visible for texture.
- Gently fold in Cool Whip to maintain a light and airy texture.
- Stir in mini marshmallows, coconut, and nuts if using.
- Cover the bowl with plastic wrap and refrigerate for at least 2 hours or overnight to set.
- Before serving, fluff gently with a spatula and top with whipped cream, cherries, and crushed wafers. Serve chilled and enjoy!
