Ingredients
- 1 lb large shrimp, peeled and deveined
- 12 oz angel hair pasta
- 1 tablespoon olive oil
- 3 cloves garlic, minced
- ¼ cup dry white wine
- 1 can petite diced tomatoes, drained
- ½ to 1 cup heavy cream (adjust based on your preference)
- 1 teaspoon Italian seasoning
- ½ teaspoon salt
- ¼ teaspoon crushed red pepper flakes
- Juice of ½ lemon
- 2 tablespoons chopped fresh parsley (plus more for garnish)
- ½ cup grated Parmesan cheese
Optional Substitutions:
- Dairy-free: Use coconut cream instead of heavy cream for a lighter, dairy-free version.
- Gluten-free: Opt for gluten-free angel hair pasta.
Instructions
Step 1: Cook the Pasta
Boil a large pot of salted water and cook the angel hair pasta until al dente, following package directions. Before draining, reserve ½ cup of pasta water.
Step 2: Prepare the Shrimp
Season the shrimp with salt and pepper. Heat the olive oil in a large skillet over medium-high heat. Add the shrimp and garlic, cooking until the shrimp turns pink (about 2 minutes per side). Remove the shrimp from the pan and set them aside.
Step 3: Make the Sauce
In the same skillet, pour in the white wine to deglaze the pan, scraping up any flavorful bits. Let it simmer for 1 minute. Add the drained tomatoes, ½ cup of heavy cream, Italian seasoning, salt, and red pepper flakes. Stir and bring the sauce to a simmer.
Step 4: Adjust the Creaminess
If you prefer a creamier sauce, stir in additional cream. Lower the heat, then add lemon juice and chopped parsley. Taste the sauce and adjust the seasoning if necessary.
Step 5: Combine and Serve
Add the cooked pasta and shrimp back into the skillet, tossing everything together to ensure the pasta is well coated. If the sauce becomes too thick, add some of the reserved pasta water. Serve immediately, garnishing with extra parsley and Parmesan.
Notes
- Fresh is Best: Use fresh shrimp and garlic for the best flavor.
- Seasoning Check: Taste the sauce before adding the shrimp back in to make sure it’s seasoned perfectly.
- Cream Adjustment: If you like your pasta extra creamy, feel free to add more cream to taste.
