Ingredients

Scale
  • 8 oz elbow macaroni
  • 2 tablespoons unsalted butter
  • 2 cloves garlic, minced
  • 2 tablespoons all-purpose flour
  • 2 cups whole milk
  • 1 cup heavy cream
  • 1 ½ cups grated Parmesan cheese
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ teaspoon nutmeg (optional)
  • 1 cup shredded mozzarella cheese
  • ¼ cup breadcrumbs (optional, for topping)

Optional Substitutions:

  • Substitute whole milk with a plant-based alternative for a lighter option.
  • Use gluten-free pasta and flour for a gluten-free version.

Instructions

Step 1: Preheat and Prepare

  1. Preheat your oven to 375°F (190°C) and lightly grease a 9×9-inch baking dish.
  2. Cook the macaroni in salted boiling water until al dente according to package instructions. Drain and set aside.

Step 2: Make the Alfredo Sauce

  1. In a medium saucepan, melt butter over medium heat.
  2. Add minced garlic and sauté for 1 minute until fragrant.
  3. Stir in the flour to form a roux. Cook for 1–2 minutes, stirring constantly, until slightly golden.

Step 3: Whisk in Liquids

  1. Gradually whisk in the milk and heavy cream, ensuring no lumps form.
  2. Continue stirring frequently until the sauce thickens.

Step 4: Add Cheese and Seasonings

  1. Add grated Parmesan cheese, salt, pepper, and nutmeg (if using).
  2. Stir until the cheese melts and the sauce is smooth.

Step 5: Assemble and Bake

  1. Combine the cooked macaroni with the Alfredo sauce and transfer to the prepared baking dish.
  2. Sprinkle shredded mozzarella cheese on top and breadcrumbs, if desired.
  3. Bake for 15–20 minutes or until the top is golden and bubbling.

Notes

  • Use freshly grated Parmesan for a creamier sauce.
  • Ensure the roux is golden, not dark, to maintain a smooth texture.
  • Toast breadcrumbs before topping for added crunch.
