  • pounds chicken tenders
  • 1 cup plain Greek yogurt (or mayonnaise)
  • 1 packet (1 ounce) ranch seasoning mix
  • 1 cup shredded cheddar cheese
  • ½ cup grated Parmesan cheese
  • ½ cup crushed Ritz crackers (or panko breadcrumbs)
  • ½ teaspoon garlic powder
  • 1 teaspoon paprika
  • ¼ teaspoon black pepper
  • Olive oil or cooking spray

Instructions

  1. Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper or spray with cooking oil.
  2. In a medium bowl, whisk together Greek yogurt and ranch seasoning until smooth.
  3. In a separate shallow dish, combine cheddar cheese, Parmesan, crushed Ritz crackers, garlic powder, paprika, and black pepper.
  4. Dip each chicken tender in yogurt mixture, coating completely. Let excess drip off.
