- 2 teaspoons baking powder

- ½ cup unsalted butter, melted
- ¾ cup granulated sugar
- 2 large eggs
- ⅓ cup strong coffee or espresso, cooled

- 1 teaspoon vanilla extract
- 8 oz cream cheese, softened
- ¼ cup powdered sugar
- 1 egg yolk
- ½ teaspoon vanilla extract (for filling)
Instructions
- Preheat oven to 375°F (190°C). Line 12-cup muffin tin with paper liners or grease well.
- Beat softened cream cheese until fluffy. Add powdered sugar, egg yolk, and vanilla extract. Mix until smooth and set aside.
- In a large bowl, whisk together flour, baking powder, and salt.
- In another bowl, whisk melted butter and granulated sugar. Add eggs one at a time, then stir in cooled coffee, milk, and vanilla extract.
- Fold wet ingredients into dry ingredients until just combined. Don’t overmix.
- Fill muffin cups halfway with coffee batter. Add 1 tablespoon cream cheese mixture to each. Top with remaining batter, filling cups ¾ full.
- Optional: Add streusel topping if desired.
- Bake 18-22 minutes until golden and a toothpick comes out with just a few moist crumbs.
- Cool in pan for 5 minutes, then transfer to wire rack.
