Description

Cinnamon Apple Sweet Potato Waffles are crispy on the outside, tender on the inside, and naturally sweet from apple and sweet potato. This easy breakfast comes together in about 25 minutes and is perfect for a cozy morning or relaxed brunch.


Ingredients

  • 1 apple, grated
  • 1 large sweet potato, spiralized
  • 1 tsp cinnamon
  • 1 egg, lightly beaten
  • Cooking spray, as needed

Instructions

  1. Preheat a waffle iron.
  2. Spray a medium skillet with cooking spray and heat over medium-high heat.
  3. Add the spiralized sweet potato and cook, stirring frequently, until tender, about 8 to 10 minutes.
  4. While the sweet potato cooks, grate the apple using the large holes of a grater and remove any seeds.
  5. Add the grated apple to a medium bowl, then add the cooked sweet potato, cinnamon, and lightly beaten egg.
  6. Toss everything together until well combined.
  7. Spray the hot waffle iron with cooking spray and add half of the sweet potato mixture.
  8. Cook until the waffle is golden brown and crisp, about 8 to 10 minutes, depending on your waffle iron.
  9. Repeat with the remaining mixture.
  10. Serve immediately with your favorite toppings.

Notes

  • Cook the sweet potato until just tender, not mushy, for the best waffle texture.
  • The apple does not need to be cooked before adding it to the mixture.
